Easy Homemade Daifuku Recipe

Wie geht’s? It’s Mr. Wada back on duty. It is often said that Wagashi (traditional Japanese sweets) is healthy since we don’t use butter, oil, etc. as well as Daifuku. The fact is, we use LOTS OF SUGAR instead. However, we could of course lessen the sugar! Yummy sweets without fat with less sugar? Sounds great, doesn’t it? Here is an easy Daifuku recipe.

Daifuku Recipe

Ingredients (for 4-5 pieces)

Mochi (rice cake):
– 90 grams of Shiratamako (rice flour)
– 120 ml of water
– 2 tbsp of sugar

– little starch

Filling:
– anko (red bean paste)

You can use pre-cooked canned anko, or make your own (canned anko is very sweet).

 

Let’s Get Started

  1. Mix Shiratamako, water and sugar in a bowl.
  2. Cover with saran wrap and microwave for 2 minutes. Then, form the rice cake into a ball (mochi).
  3. Transfer the mochi onto a tray (starch would help not to stick), split it into 4-5 pieces.
  4. Before the mochi gets cold and hard, stuff it with anko.
  5. Coat daifuku with some starch then done!

You can have it while warm or cold (I prefer cold).

Lastly

How was it? Green tea would be nice but it actually matches perfectly with coffee as well. Please try it and lemme know how it goes.
